Meal Ideas For Challengers

Im so excited to share this with you all. I put together a list of 6 different, breakfast, lunch, dinner, snack and dessert ideas just for you! I hope you enjoy! -Lily Rubio  


























1. Peanut Butter Cup Shakeology:
  • 4 oz of unsweetened almond milk
  • 8oz water
  • 1 scoop of Vegan chocolate Shakeology
  • 1 tsp of natural peanut butter
  • 1 cup of ice
  • 1/2 frozen banana 
  • 1 green container of spinach (optional)
2. Pumpkin french toast:

Here's the recipe:
-7 slices of organic toast cut crust
-1 egg
-1/2 cup of canned pumpkin -1/2 Almond milk -1 tsp of cinnamon -coconut sugar to taste I added about 1/2 tbs
Coat bread and cook in coconut oil or grass fed butter
🍎APPLE TOPPING:
Add one 1tsp of coconut oil in a pan then add
-1 Apple diced small
-cinnamon & a pinch of seas salt
Cook until it softens


3.  Chocolate Crepes:

4. Shakeology Smoothie Bowl: 
  • 1.5 cup of ice
  • 1 scoop of shakeology
  • 4oz of unsweetened almond milk or water
  • 1/2 frozen banana or 1/2 cup of frozen berries of choice
  • 1 tsp of peanut butter

5. Bacon Egg and Cheese Breakfast Sandwich:

  • 1 slice of organic whole grain toast
  • 1 cooked egg
  • 1 slice of sharp cheddar cheese 
  • 2 slices of uncured bacon or turkey bacon
  • 1 green container of arugula 

6. OverNight Oats:

  • 1 cup rolled oats
  • 1 cup of unsweetened almond milk
  • 1 tsp of cinnamon
  • 6 crushed pecans
  • 1tbs of maple syrup
    Mix together and refrigerate overnight

1. BKAT Sandwich (bacon,kale,avocado tomato):
  • 2 slices of organic whole grain toast
  • kale
  • 2 slices of uncured bacon or turkey bacon
  • 2 slices of tomato
  • 1/2 has avocado smashed seasoned with lime and sea salt
2. Ground Beef Tacos:
  • 1 red container of ground grass fed beef or turkey seasoned with diced onions, green pepper, seal salt, oregano, garlic powder and cumin
  • 2 corn sprouted corn tortillas (found in freezer section of whole foods) or reg. corn tortilla
  • topped with fresh tomatoes, lime, sea salt
  • 1/2 has avocado divided by 2 tortillas 
  • greek yogurt 
  • Cholula hot sauce
3. Mango Chicken Salad: 
  • 2 green containers of Arugula 
  • 1 orange container of chopped pecans
  • Grilled Chicken seasoned with lemon pepper seasoning 
  • sliced red onion
  • 1/2 sliced mango
  • Dressing: Olive Oil & balsamic vinegar
     
4. Stacked Sweet Potato with Steak: 
  • 1/2 sweet potato microwaved for 5 min (wrapped in paper towel)
  • thinly sliced beef
  • 1/4 red pepper
  • 1/4 onion (sauté peppers and onion in tsp of olive oil & sea salt)
  • top with cilantro 
5. Sautéed Kale with Pepper & Onion:
  • 1/4 onion
  • 1/4 red pepper Sautéed in 1 tsp of olive oil salt & pepper
  • Add 2 green containers of Kale  until softened then add
  • 1/2 blue container of feta cheese
  • top with 2 cooked eggs
6. Rotisserie Chicken:
  • 1 red container of store bought chopped rotisserie chicken
  • 1 small red potato microwaved for 5 min wrapped in paper towel 
  • sautéed asparagus with red onion (first sauté red onions until softened then add asparagus until softened

1. 21 day fix Chili:
  • Top with cilantro, feta or avocado

2. Bun less Burger:
  • 1 lb of grass fed beef to make extras for meal prep
  • 1/2 jalapeño remove seeds

3. Greek Lettuce Wraps: 

  • Butter lettuce. I smother with a blue container of hummus (with some space for feta), grilled lemon chicken, tomato slices, kalamata olives, feta and red onion.

4. Steak & Mushrooms:

  • Sirlion seasoned with sea salt and Balsamic vinegar
  •  sauté mushroom in a pan with a tsp of olive oil & a tsp of soy sauce
  • garnished with micro greens

    Side of Asparagus sautéed in olive oil an sea salt until it begins to soften but don't overcook 

5. Orzo with Grilled salmon:

6. Chicken Legs & Kale:

  • Season chicken legs on all sides with flavorgod garlic lover or lemon pepper seasoning bake in oven for 40 min on 365 degrees
  • Kale:remove stems and saute in olive oil, sea salt and slivered almonds






1. Hard boiled eggs:

2. Greek Yogurt with Fruit:
  • Plain greek yogurt topped with 1/2 chopped apple, cinnamon and drizzle of honey


3. Tomato Caprese:

  • 1 medium tomato with 2 oz of fresh mozzarella topped with balsamic vinegar, oilive oil, fresh or dried basil and sea salt


4. Avocado Toast: 

  • Organic Daves killer bread with 1/2 a mashed has avocado seasoned with sea salt and lemon, tomato with sea salt and pepper and a squeeze of lemon juice


5. Crackers & Cukes:

  • 8 whole wheat crackers with cilantro jalapeño hummus from Trader Joes, thinly sliced cucumber topped with cilantro, sea salt and paprika for spice

6. Balsamic Tomatos with humus:

  • Green container of cherry tomatoes, drizzled with olive oil, balsamic vinegar and slat to taste. Served with hummus and whole grain crackers 




1. Fruit Tart:
  • 1 slice of organic toast with 2 tsp of almond butter
    topped with fresh berries, unsweetened shredded coconut

3. Frozen grapes: Wash fresh grapes and place them in the freezer overnight

4. Cookie Dough: :

5. Banana Nice cream with hard chocolate sauce: (one portion)
  • 1 frozen banana cut in food processor 
  • 2 oz of Unsweetened Almond milk

  • Top with fresh berries

6. Banana con Coco:


  • 1 slice of organic toast with 2 tsp of peanut butter topped with 1/2 sliced banana, unsweetened shredded coconut, cinnamon and a drizzle of honey
